1 tablespoon of olive oil

1 large garlic clove, crushed

½ teaspoon ground cumin

Chili flakes as desired

2 chopped tomatoes

4 eggs

1 tablespoon hot sauce 

Greek feta cheese

Coriander leaves for garnish

 


How to prepare fried eggs with tomatoes and hot sauce

Heat olive oil over medium-high heat in a large skillet with a lid.

Add garlic, cumin and chili flakes, and sauté for 1 minute.

Add the chopped tomatoes, then reduce the heat to medium and simmer for 10 minutes, stirring occasionally.

Use a spoon to make two appropriate holes in the sauce and crack an egg into each. Cook for 4-5 minutes until the egg whites are set but the yolks are still soft.

Place the lid on the pan for the last two minutes, to allow the surface of the eggs to set.

Sprinkle with crumbled feta, cilantro and additional chili flakes.
