This is a wonderful, very easy rice dish that is delicious in its own right served with a side of yoghurt as a complete vegetarian meal or as a nice complement to baked chicken, meat or fish dishes. This recipe can be easily doubled and is great for a dinner or Ramadan gathering.
Ingredients for
spicy rice with tomatoes
2 cups basmati rice, washed and soaked for at least 30 minutes
2 tablespoons ghee
½ cup of chopped onion
1 cup of chopped tomatoes
¼ cup of chopped coriander
Half a cup of chopped green pepper
1-2 minced garlic cloves
1 chopped green hot pepper
1 teaspoon of cumin powder
1 teaspoon coriander powder
½ teaspoon ginger powder
½ teaspoon of cardamom powder
¼ teaspoon of red pepper powder
1 cinnamon stick
2 chicken stock cubes
A pinch of black pepper
2 tablespoons tomato paste
3 cups of hot water
How to prepare spicy rice with tomatoes
In a large pot, fry the onions in ghee until slightly browned.
Add tomatoes, sweet peppers and coriander. Stir them well.
Add all the spices, chicken stock cubes, and tomato paste.
Mix them well.
Bring to a boil, then cover and simmer for 15 minutes.
Drain the rice, then add it to the pot.
Add 3 cups of hot water. Move them gently.
Stir until it boils.
Reduce the heat to very low, then cover it.
Cook for 20 minutes.
