Crunchy banana and cinnamon bread ingredients
2 large eggs
A cup of mashed banana
3/4 cup sugar
1/3 cup oil
1/2 cup Greek yogurt
Dry ingredients:
1.75 cup flour
1/4 cup cornstarch
2 teaspoons ground cinnamon
1.5 teaspoon baking powder
1/4 teaspoon salt
For the crispy layer:
1/2 cup flour
1/2 cup brown sugar
A teaspoon of cinnamon
1/4 cup butter
How to prepare crispy banana and cinnamon bread
Preheat the oven to 360 degrees Fahrenheit, grease a baking tray and line it with non-stick parchment paper.
To prepare the crispy layer, place the flour, brown sugar, and cinnamon in a medium-sized bowl, rub the butter with your fingertips until crumbs form, then put it in the refrigerator.
In a large bowl, place all the dry ingredients, and stir until well mixed.
Mix all wet ingredients together in a large measuring jug until well combined.
Pour the wet ingredients into the dry ingredients and stir well.
Place the dough in the prepared pan, then sprinkle the crumb topping evenly over it.
Bake the crispy banana and cinnamon bread for 50-60 minutes, then cool it in the pan for 10 minutes, then remove it from the tray and leave it to cool completely and serve.
