200 g rice noodles
3 eggs
2 tablespoons oil
Chopped onion
2 cloves of minced garlic
A carrot cut into thin slices
A red pepper cut into slices
Soy sauce to taste
Salt and black pepper to taste
Chopped fresh parsley for garnish
How to prepare fried rice noodles with eggs and vegetables
Boil the water, add the rice noodles and leave them to cook for 5 to 7 minutes until they are tender, then drain them from the water and leave them aside.
In a large frying pan, add oil and heat it over medium heat.
Add the chopped onions and garlic and sauté until they become golden.
Add the carrot slices and red pepper to the pan and stir until the vegetables are tender.
Add the cooked rice noodles to the pan and mix everything well.
Place the eggs in the pan and quickly mix them with the other ingredients until combined.
Add soy sauce and stir the ingredients well.
Serve the fried rice noodles with eggs and vegetables hot and garnish the dish with chopped parsley.
