3 eggplants

Two tablespoons of feta cheese

3 tablespoons of labneh

Mashed garlic

1/4 cup coarsely chopped walnuts

Pomegranate molasses for garnish

How to prepare eggplant rolls

Peel the eggplant and cut it lengthwise.

Fry the eggplant slices in oil, then place them on cooking paper to drain the oil.

Mix feta with labneh, walnuts and crushed garlic

Stuff the eggplant with the filling and roll it like a roll.

Serve it cold as a delicious side dish.

You can add pomegranate molasses as desired
