Ingredients for Lemon Cheesecake in a Cup
Ingredients for the Base
2 packs of whole wheat biscuits – 250 gr.
2 handfuls of almonds
75 gr. butter – melted
Ingredients for the Cheese Filling
3 lemons
5 – 6 tablespoons of powdered sugar
1 pack of vanilla
600 gr. fresh cheese
1 pack of cold cream – 200 ml.
1 pinch of fresh mint
Ingredients for the Garnish
Lemon zest
Fresh mint leaves
For the base;
Melt the butter in a pan.
Put the biscuits and almonds in the bowl of the food processor and grind them.
Then add the melted butter and mix.
Divide the prepared base into the moulds you will serve.
Level everything with the bottom of a glass.
Let it rest in the fridge.
For the cheese mixture;
Grate the lemon peels into a mixing bowl.
Squeeze the lemon juice over it.
Add powdered sugar and vanilla into the water and mix with a whisk.
Then add the fresh cheese and mix with a spatula.
Put the cold cream in a separate mixing bowl and beat with a mixer until it solidifies.
Add the finely chopped fresh mint and mix with a spatula.
Add the prepared mint cream to the cheese mixture with a spatula, close it and mix.
Put the prepared cheese mixture in a piping bag.
To assemble;
Squeeze the cheese mixture in the piping bag onto the biscuits you have prepared.
Then smooth them out with a spatula.
Place in the fridge and let cool.
Garnish with fresh mint leaves and lemon zest and serve.
