Coffee cookie ingredients
1/2 cup flour
1/2 cup cocoa powder
1/4 cup sugar + 1 tablespoon
1/4 cup brown sugar + 1 tablespoon
A teaspoon of vanilla
A tablespoon of espresso powder
3 tablespoons unsalted butter, melted
1/4 teaspoon salt
1/4 teaspoon baking soda
1 egg white
A cup of sugar to decorate cookies
How to prepare coffee cookies.
In a mixing bowl, sift the flour, cocoa powder, espresso powder, salt and baking soda.
In another mixing bowl, put the butter, brown sugar, sugar, egg whites, and vanilla extract, and mix well until you get a rough, lumpy mixture.
In the blender, put the flour mixture and the butter mixture and blend until you get a crumbly mixture.
Stop the mixer and knead the mixture with your hands until you get a ball of dough.
Take small amounts of dough and form small balls.
Pass the dough balls into a plate filled with sugar.
Place the cookie balls on a baking tray covered with parchment paper and bake in a 350°F oven for 8 to 10 minutes or until the sides are slightly crispy.
Let the coffee cookies cool, then serve them.
Note: Store coffee cookies in an airtight plastic container at room temperature for up to 3 days.
