Ingredients for spicy Brazilian chicken
A teaspoon of cumin
A teaspoon of cayenne pepper
A teaspoon of turmeric
A teaspoon of ground coriander
1/2 teaspoon garlic powder
A teaspoon of salt
1/2 teaspoon pepper
4 boneless chicken breasts
3 tablespoons olive oil
A medium onion, chopped
1 jalapeno pepper, seeded and chopped
A tablespoon of chopped fresh ginger
3 cloves of minced garlic
3 medium tomatoes, chopped small
Half a tablespoon of freshly squeezed lemon juice
395 ml unsweetened coconut milk
2 tablespoons chopped parsley
How to prepare spicy Brazilian chicken
In a large bowl, mix together the cumin, cayenne pepper, turmeric, coriander, garlic powder, salt, and pepper.
Add the chicken to the bowl and rub the chicken all over with the spice mixture until well coated.
Add 2 tablespoons of olive oil to a large frying pan and heat it over medium heat.
Add the chicken and cook on both sides, until browned and cooked through, then transfer to a plate and cover with foil.
Add the rest of the olive oil to the pan and heat it, then add the onions, chili peppers, ginger, and garlic and cook until the onions are soft and translucent.
Add the tomatoes and lemon juice, season with a little salt and pepper, and leave everything on the fire for another 5 minutes until the tomatoes are tender.
Add the coconut milk and simmer for another 5 minutes until the sauce thickens.
Add the chicken back to the pan, reduce the heat to low and let it cook for another 5 minutes.
Garnish with parsley and serve the spicy Brazilian chicken hot with rice.
