2 cans peeled Italian tomatoes

3 tablespoons olive oil

4 cloves of minced garlic

2 sprigs of fresh thyme

A small red onion cut into cubes

A tablespoon of tomato paste

A teaspoon of salt

A teaspoon of sugar

Black pepper as desired

For eggplant and parmesan


3 eggplants

Parmigiano cheese

Salt and pepper

1/3 cup coarsely chopped capers

1/3 cup olive oil

3 cloves of garlic, finely chopped

Fresh mozzarella cheese cut into slices



Preparation method

To prepare tomato sauce, puree the tomatoes in a blender.

In a pot over high heat, heat the olive oil, then add the garlic and fresh thyme and cook until they turn light brown on the edges.

Add the chopped onions, tomato paste, and salt and cook for 5 minutes until the onions are tender.

Add the crushed tomatoes, then reduce the heat to medium-low, partially cover the pot and simmer for about 30 minutes, stirring occasionally, until the mixture is about half the size.

Add ground black pepper and mix, then leave the mixture aside.

To prepare the eggplant and parmesan, cut the eggplant into very thin slices, then place them in a single layer on a tray.

Drizzle the eggplant with olive oil, then grate a thin layer of Parmigiano cheese evenly over it, season with salt and pepper, then place it in the oven and cook until the top is golden. Then take the eggplant out of the oven.

To fry the capers, heat 1/3 cup of olive oil over high heat.

Add the chopped capers and fry for 5 minutes, until they wilt and become crispy, then drain and set aside.

Put 3 finely chopped garlic in the frying oil.

Preheat the oven to 250 degrees Celsius.

In a baking tray, sprinkle some flour, then place the pizza dough on it.

To prepare the pizza, put a small amount of tomato sauce on top of the dough, then put a layer of roasted eggplant, then put the mozzarella pieces on top, then sprinkle them evenly with the crunchy capers, then grate more parmesan cheese on top. Finally, drizzle some garlic oil on top and brush the edges of the dough as well.

Bake the pizza until it is crispy and golden, and serve it hot.
